MEAL- 2 cups rotini chickpea pasta
- 2 tablespoons olive oil
- 1 cup chickpeas, drained and rinsed
- 3 garlic cloves, minced
- 1 teaspoon red pepper flakes
- 1 teaspoon pink salt
- 1/2 teaspoon black pepper
- Juice and zest of 1 lemon
- 1 cup torn baby spinach
- 1/4 cup grated Pecorino cheese plus more for serving
- 2 tablespoons chopped parsley
- Best to add Chicken or Beef
