  • 2 tablespoons olive oil
  • 1 cup chickpeas, drained and rinsed
  • 3 garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon pink salt
  • 1/2 teaspoon black pepper
  • Juice and zest of 1 lemon
  • 1 cup torn baby spinach
  • 1/4 cup grated Pecorino cheese plus more for serving
  • 2 tablespoons chopped parsley
  • Best to add Chicken or Beef
